Chicken Pesto Sandwiches



I bought a jar of pesto last weekend, thinking it'd be good for a couple meals. I used it in the beginning of the week tossed with some pasta, chicken and portobello mushrooms. Then I used it last night after zumba to make these delicious chicken pesto sandwiches. I was going to cook the chicken in my grill pan, but was feeling lazy and concerned about how long that would take, and it was already after 8 p.m. Instead I cut the chicken up into bite-size pieces and quickly browned it in a saute pan with some olive oil. I spread some jarred pesto onto one half of a kaiser roll, some chicken on the other half, a slice of havarti cheese over the chicken and cooked it under the broiler for a few minutes, to melt the cheese and toast the bread. The havarti melted beautifully over the chicken. I then added a little sliced red onion and marinated artichoke hearts, and had a delicious chicken pesto sandwich for dinner with a side of curly fries.

Wednesday Night Dinner: Salad and Rosemary-Garlic Chicken Sandwiches



This week I decided I really wanted to make salad for dinner, but also needed something to go along with the salad. So I spent most of my Tuesday thinking about what kind of entree would go along with the salad. I finally settled on making this rosemary-garlic chicken, but in sandwich form. This chicken is pretty much the tastiest chicken ever. We put it on rolls with fresh spinach and havarti cheese and it was delightful. I served a field greens with pomegranates salad on the side that was also pretty outstanding.

artichoke quarters
tomatoes
carrots
red onion
cucumber
goat cheese
sliced almonds (sunflower seeds would be a good sub)

Toss and serve with balsamic dressing.

Grilled Green Chile and Cheese Sandwich



My sister moved into my house and I'm thinking it means I might cook more often now that there's someone else around. I had leftover green chiles from last week's Wednesday night dinner, and some leftover havarti cheese, and the perfect recipe came to mind—Pioneer Woman's favorite sandwich. The sandwich consists of green chiles, tomatoes, red onions, and cheese with a sauce made of dijon and mayo. It was pretty delicious. On the side I roasted some sweet potatoes and threw together a salad. For the sweet potatoes, just toss them in olive oil, add a little salt and pepper, and roast for 35 minutes at 375 degrees. Delish!
